These large, unmistakable "cauliflower mushrooms" can be found growing from the bases or roots of trees in eastern North America's hardwood forests (the western version is Sparassis radicata). Sparassis spathulata is a very rare sight in Britain and Ireland. This species is also found in central and northern mainland Europe and is recorded in other parts of the world including North America (although spore dimensions there are somewhat larger than in Europe and may indicate that these are not co-specific with the European type). Sparassis Spathulata is easily mistaken for Wood Cauliflower Sparassis crispa.

This appearance can be described as similar to a sea sponge , a brain , or a head of cauliflower , from which it has been given its popular name. This paper takes up an example of the latter case, where the European representative is known as Sparassis brevipes (or S. nemecii) and the American as S. spathulata (or S. herbstii). Phylogenetic placement shows that European and North American entities differ and that different names are appropriate. Hydnopolyporus fimbriatus can take a form that readily resembles Sparassis spathulata. As the name implies, fimbria - fringed - will have fringed edges. The fringes are variable in size and often make for a confusing look-a-like to S. spathulata. Photo provided by April Kuhlmann

Other  Sparassis spathulata is an almost identical mushroom which grows with broadleaf trees, it is also known as Wood Cauliflower and is equally edible. Hydnopolyporus fimbriatus can take a form that readily resembles Sparassis spathulata. As the name implies, fimbria - fringed - will have fringed edges.

Sparassis spathulata … Today 11th August 2018, I came across something similar to your image of Sparassis spathulata. Highly gelatinous, elastic, smooth, greasy and shiny. Possibly an aged specimen. Never encountered such a 'tree seaweed' hitherto.
